Following twenty years of farmer's markets selling locally grown vegetables, native fruits, and local honey Linda created Marianne's Kitchen in Shoreview, MN, an oasis of good food, conversation and laughter in a suburban food desert. Operating from 2011-2017 the cafe offered home made soups, fresh bread baked daily, great sandwiches and treats and a complete line of gluten-free soups, pickled products, jams, jellies, salsas and locally sourced soups, honey and grains.

The Marianne's Kitchen of sharing, conversation, and learning continues with ongoing commentary, food reviews and food finds as we grow, cook and eat our food and sample local restaurants.

Time for an easy but wonderfully delicious dinner.

Strudel & Roasted Vegetables

Thanks to Tom Ruhland, it’s another fabulous spinach, feta, artichoke, & red pepper strudel, with feta, ricotta, mozzarella, provolone & parmesan plus (thanks to Linda) the veggies & highlighted with garlic, lemon juice, & spices. Brimming with filling, I baked it to crispy golden brown after giving it a brush with some egg wash.

Della reminded me I had some zucchini in the fridge, so as long as I already had a ‘hot’ oven going, It was time for roasted veggies. The strudel is quite filling, so zucchini & sweet onion, tossed with a bit of gremolata oil (more lemon highlights!) made a side that wasn’t too heavy.  Pop everything in the oven...then wait til the kitchen smells great...& dinner is ready.



What an easy but fabulous dinner. Spinach, feta, artichoke strudel with red pepper and many kinds of cheese...with a side of roasted zucchini and sweet onion in gremolata olive oil.

An easy side...slice a couple of zucchini and a sweet onion...toss with olive oil of your choice...and give the whole thing a hot oven



The egg wash brings the strudel to a fabulous golden brown...
